Ingredients
2-3 egg yolks – *see below
1 ripe avocado
1/2 tsp salt (or to taste)
1/4 tsp black pepper
pinch of cayenne pepper
1 tsp dry mustard
1 tsp homemade Dijon mustard
3/4 tsp paprika
1 TBS fresh lemon juice
1 tsp white wine or tarragon vinegar
2/3 cup peanut oil
1/3 cup olive oil – ** see below
Place the egg yolks and avocado in a blender or food processor. Then add the lemon juice, white wine and all of the seasonings. Pulse for 1 second and then when the appliance is on SLOWLY add the peanut/olive oil mixture and process until smooth.
